Aycliffe Today’s resident chef Debbie Elizabeth serves up a weekly mouthwatering suggestion specially for our readers.

This week…

Cottage Pie

Serves 4
Prep time 15 mins
Cooking time 55 mins

Ingredients
1.5 kg basic potatoes
1 onion peeled and sliced
350g lean steak mince
1 tin chopped tomatoes
500g carrots, peeled and sliced
1 tbsp olive oil
1 tsp dried mixed herbs
1 garlic clove peeled and chopped
Knob of butter
3 tbsp milk
1 tsp mustard
Black pepper to season

Method
1. Bring large pan of water to the boil. Meanwhile , peel the potatoes then add to the pan and simmer until tender.
2. Heat the olive oil in a pan and fry the onion and garlic until soft, add the mince and cook until browned.
3. Add the mustard, chopped tomatoes and dried mixed herbs, then simmer for 15 mins.
4. Preheat oven to 180, fan 160, gas 4. Mash the potatoes with butter and a little milk to create a smooth mash.
5. Place the beef mixture into an ovenproof dish, then top with the mashed potatoe, covering the beef evenly. Bake for 25 minutes.
6. Meanwhile, steam or boil the carrots until tender, serve with cottage pie.
